The halibut itself is simply seasoned to preserve its natural, mild flavor and firm, flaky texture. The peanut butter sauce is served separately, adding richness and depth without overpowering the fish, consider this a perfect blend of sweet salty and acidic . This contrast of flavor allows each component to stand on its own while still working together on the plate. Ingredients


• (4) Halibut Steaks or Halibut Filets

• 1/4 cup of extra virgin olive oil

• Seasoned salt of choice

• Thai Curry Seasoning (https://a.co/d/dFBMVuw)

• 3 cups of peanut butter

• 1/2 cup of fish sauce

• 1/2 cup of Marukan Seasoned Gourmet All Natural Rice Vinegar Sweet And Tangy

• 1/4 cup of honey

• 1/2 cup of chopped red onions

• 1/2 cup of red pepper chili threads (https://a.co/d/buTRmJK)

• 1/2 cup of parsley

• 1 grapefruit

• 1/4 cup of coconut milk

• 1/2 cup of butter

Instructions


Halibut

  1. Drizzle your halibut with extra virgin olive oil and add season salt + thai curry seasoning (if you have time allow to marinate in the refrigerator for 1 hour so the marinade penetrates)

  2. Sear in a cast iron pan with butter that's been heated at medium for 5 minutes (sear on both sides 3 minutes per side to add color)

  3. Continue cooking in the over at 350 degrees for 10 minutes or until cooked all the way through


Sauce

  1. Combine peanut butter, fish sauce, rice vinegar and honey

  2. Mix well for 1 minute and then add to a blender for 10-15 seconds (Do not over blend)


Fish Toppings

  1. Chop red onions, parsley, and red chili pepper threads


Plating

  1. Add the peanut butter sauce to a plate

  2. Plate the fish

  3. Use professional chef tongs to plate the onions, parsley, and red chili pepper threads allowing adequate spacing

  4. Add drops of coconut milk to one side of the peanut butter sauce and spread

  5. Drizzle butter on top of the fish (1/8 cup)
